Pork tenderloin is a versatile and tender cut of meat that can be transformed into a delicious main dish with the right sauce. Ingredients
- 1 pork tenderloin (about 1 pound)
- 2 red bell peppers
- 4 ripe tomatoes
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh basil for garnish
Preparation
Start by preheating your oven to 400°F (200°C). Roast the red bell peppers and tomatoes until the skins are blistered and charred, about 20-25 minutes. Remove from the oven and let cool slightly. Peel the peppers and tomatoes, then chop them roughly.
While the vegetables are roasting, season the pork tenderloin with salt, pepper, and smoked paprika. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 5 minutes. Transfer to a baking dish and roast in the oven for 15-20 minutes or until the internal temperature reaches 145°F (63°C).
In a blender, combine the roasted peppers, tomatoes, garlic, and remaining olive oil. Blend until smooth. Pour the sauce into a saucepan and simmer over low heat for 10 minutes, adjusting seasoning as needed.
Serving
Slice the rested pork tenderloin into medallions and arrange on a serving platter. Spoon the roasted pepper and tomato sauce over the slices. Garnish with fresh basil leaves for added flavor and color. Serve immediately with your favorite side dishes such as rice, pasta, or roasted vegetables.
