Skillet Cauliflower Rice with Vegetables and Chicken

Cauliflower rice has become a popular low-carb alternative to traditional rice, especially when combined with fresh vegetables and tender chicken. This skillet recipe is quick, healthy, and versatile, perfect for a nutritious weeknight dinner.

Ingredients Needed

  • 1 head of cauliflower or 4 cups pre-riced cauliflower
  • 2 chicken breasts, diced
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce or tamari
  • Salt and pepper to taste
  • Optional: chopped green onions and sesame seeds for garnish

Preparation Steps

Start by preparing the cauliflower. If using a whole head, chop it into chunks and pulse in a food processor until it resembles rice. Set aside. In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the diced chicken to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 30 seconds. Add the mixed vegetables and cook until tender, about 3-4 minutes.

Stir in the cauliflower rice and cooked chicken. Pour in the soy sauce and mix well to combine all ingredients. Cook for another 5 minutes, allowing flavors to meld and cauliflower to soften slightly.

Serving Suggestions

Serve the skillet hot, garnished with chopped green onions and sesame seeds if desired. This dish pairs well with a side salad or steamed greens for a complete meal.

Health Benefits

This cauliflower rice dish is low in carbohydrates and high in fiber, vitamins, and minerals. The addition of lean chicken provides a good source of protein, making it a balanced and nutritious choice for a healthy diet.
